<p><strong>Buffalo Taco Cups</strong> (simple appetizer)</p>
<p>1lb ground bison meat<br />
1 (1.25 oz) pkg taco seasoning<br />
1 (10 oz) can refrigerated buttermilk biscuits<br />
1/2 c. shredded cheddar cheese</p>
<p>Brown taco meat until no pink- Add taco seasoning to bison.  Press biscuits into bowl shape pushing center down and guiding sides up a medium muffin pan.  Fill biscuits with seasoned meat.  Bake at 400 degrees for 15 minutes.  Sprinkle with cheese.  Bake an additional 2-3 minutes or until cheese is melted.  Serve with salsa if desired.</p>

<p><strong>Bison Burger</strong> (Basic starters burger)</p>
<p>1lb bison ground (or patty)<br />
1 tsp pepper<br />
1 tsp sea salt<br />
2 tbp bbq (optional)<br />
1 tsp olive oil (optional) helps for new bison grillers</p>
<p>Preheat grill using charcoal or gas.  Mix ingredients into a mixing bowl and form three 1/3 lb patties.  We prefer to use 1/3 lb patties because bison is a lean meat and can be quite different to grill then a fatty piece of beef (1/3 lb over 1/4 lb allows more room for error in overcooking a bison patty).  If using pre-made patties, coat the patty with olive oil prior to placing on grill.  Place burgers on grill and grill first side until juice run through meat- it is important to not push the burgers with spatula.  Doing this can dry out the burger.  Flip burgers and allow other side to cook to desired wellness.  Internal temperature should be at 160 degrees.  Once burgers done, allow to sit 5-10 minutes as the meat continues to cook and juices recirculate.</p>
<p><strong>**When cooking lean bison it is better to cook low and slow to achieve maximum flavorful taste**<br />
**Rule of thumb for grilling bison- double grilling time to allow most tender meat**<br />

<p>Elliott and Sons Bison started as an idea of providing something better than the standard product of red meat. We wanted to offer something more to our customers with the dedication of pure meat raised from grass fed animals.  We surpassed our original goal by providing one of the healthiest protein options available (see chart below).</p>
<p><span id="more-1580"></span>Our bison are treated with the most respect from birth until the day of processing.  It is our goal to provide the healthiest red meat in the market.  We do this by raising our bison locally and feeding them only natural blends of grass for natural growth.  As a result we offer the best &amp; healthiest product possible to our customers.</p>
<p>Dedicated to the DeKalb County area and looking to expand, we look forward to serving the needs of the Chicago area with a focus on locally owned, home grown bison.   We sell direct to consumers as well as commercially.  Locally, our meat can be bought at HyVee in Sycamore or call us and we’ll deliver right to your door.</p>
